QuickTime Player, for instance, can open pretty much every media filetype, regardless of whether they are associated with other apps or not, either from the Open menu, or by dragging the file onto the QuickTime Player icon. (This drag-and-drop file opening is especially convenient with a launcher/dock app like DragThing.) All without messing with the file extension.
